This course has been designed to meet the needs of the food and drink industry by providing high-level
training. You’ll gain a graduate level qualification at the same time as being employed in the sector.
About this course
Food and drink is the largest manufacturing sector in the UK. It employs some 500,000 people, representing around 14% of the manufacturing workforce. Research has shown that applied professional learning, when undertaken alongside working commitments, can help employees improve their performance and realise their potential for management-level positions.
Accredited by the Institute of Food Science and Technology, this course covers a wide range of disciplines. You’ll look at the chemistry and biology that underpin food science as well as studying nutrition and the physiology of the human diet. Your learning will incorporate food production methods, product development, and packaging.
You’ll develop knowledge of scale-up trials and quality assurance. You’ll also study food safety and the relevant legislation and business knowledge needed for the sector.
Strong emphasis is placed on reinforcing theoretical knowledge with practical, workbased application, utilising food manufacturing pilot plant equipment.
The course is delivered on a day-release basis, one day a week. For the rest of the week you will be expected to work within the food industry (typically three days a week). This means you get to apply your learning directly to your products and workplace.You’ll also undertake independent studies, including working on your coursework. If you are not already employed in the sector, staff will help you find suitable employment as soon as your place is confirmed.
You will experience a range of learning and teaching methods. As well as traditional lectures and tutorials you will undertake practical work in our food processing laboratory and chemistry laboratory. Visits to commercial businesses are also arranged. Your course begins slightly earlier in the academic year than a typical university course and finishes later to ensure that you can complete all the taught sessions required.
Industry leaders such as KP Snacks, 2 Sisters Food Group and Quorn have recently sponsored students on this course as part of their professional development. This degree will help your career progression within the food and drink sector. It is appropriate for a range of roles including quality assurance, technical, production, and new product development.
What you'll study
Study aspects of chemistry and biology that are of particular relevance to food production. Carry out laboratory analysis of foodstuffs and learn the principles of data analysis.
Gain an understanding of how the quality and composition of raw materials can affect the final product. Examine methods of primary production and undertake food processing practicals to assess the applicability of raw materials for specific products.
Examine concepts, methodologies and techniques of food quality assurance, including hazard analysis and critical control points (HACCP). Carry out microbiological analyses and shelf-life assessments and apply this knowledge to your workplace by undertaking a work-based project.
Gain the knowledge and skills to implement safe practices in the production of food. The module (supplemented by content in other modules) covers the Chartered Institute of Environmental Health (CIEH) Level 4 Food Safety syllabus.
Examine the physiology of the human diet and apply this knowledge by creating a new food product designed to meet a specific nutritional requirement. You will acquire an understanding of new product development techniques and the role of nutrition in the food manufacturing sector.
Explore the UK and European legislative framework that regulates food production, the principles that underpin it and the means by which it is administered and enforced. You will also study aspects of business management.
Develop knowledge and understanding of microbial food spoilage and toxin production. Undertake laboratory work, learning and applying a variety of techniques for the microbiological assessment of food.
Study basic concepts in metabolism, the biochemical reactions of photosynthesis, enzyme activity and fermentation pathways.
Explore the potential environmental impacts of the food industry and evaluate the environmental management techniques used. Study the approaches of the UK to pollution control, including legislative requirements.
Learn how to combine theory with practical application. Using the pilot plant equipment in the food processing hall, discover a range of food processing operations on a broad variety of food raw materials.
Gain a sound understanding of unit operations used in the food industry, including mixing and emulsifying, filtration, heat processing methods, materials handling and packaging systems.
Carry out an individual work-based study project on a topic approved by the University and your employer.
